  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn fresh or frozen
  • 2 cups Spinach chopped; kale or Swiss chard can serve as alternatives
  • 1 cup Cheese shredded; mix of cheddar, pepper jack, or Monterey jack
  • 1 teaspoon Paprika can substitute with smoked paprika or chili powder
  • 1 teaspoon Cumin
  • to taste Kosher Salt can use sea salt or table salt
  • to taste Ground Black Pepper freshly ground preferred
  • 4 Flour Tortillas can use corn tortillas for gluten-free option

Method
 

Step-by-Step Instructions
  1. In a medium sauté pan, heat 1 tablespoon of olive oil over medium heat for about 1 minute until it shimmers.
  2. Add 2 cloves of minced garlic and 1 small diced onion to the pan, cooking for 1-2 minutes until fragrant and translucent.
  3. Toss in 2 cups of chopped spinach and sauté for an additional 1-2 minutes, or until wilted.
  4. Stir in 1 cup of drained black beans and 1 cup of corn, cooking for 5-6 minutes until heated through.
  5. Reduce heat to low, then mix in 1 teaspoon paprika, 1 teaspoon cumin, kosher salt, and ground black pepper to taste. Stir in 1 cup of shredded cheese until melted.
  6. Steam 4 flour tortillas in the microwave for 20 seconds to soften them.
  7. Place a generous amount of filling in the center of each tortilla, wrap tightly, folding in the sides first.
  8. Enjoy your burritos warm, with optional lime juice or hot sauce on the side.
