  • 8 oz mascarpone cheese Can substitute with more cream cheese
  • 1 cup confectioner's sugar Granulated sugar can be powdered
  • 1 cup heavy cream Light cream can be used but texture will vary
  • 1 tsp vanilla extract
  • ½ tsp almond extract Omit for simpler flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a mixing bowl, whisk together cake flour, baking powder, and salt.
  3. In another bowl, beat vegetable oil, unsalted butter, and granulated sugar until light and fluffy.
  4. Add in egg whites and vanilla extract, mixing until smooth.
  5. Gradually mix dry ingredients into wet ingredients, alternating with whole milk.
  6. Pour batter into the pan and bake for 32 to 38 minutes.
  7. Cool in the pan for 15 minutes, then invert and cool completely.
  8. Spread warmed raspberry and strawberry jam over the cooled cake.
  9. Warm additional jam and coat fresh berries; spread over jam layer.
  10. Beat cream cheese and mascarpone until fluffy; mix in confectioner's sugar.
  11. Whip heavy cream and fold into cheese mixture.
  12. Frost the cake and top with glazed berries; chill for 1 hour before serving.
