- Prepare your smoker or grill by preheating it to 225°F (107°C) and trim excess fat from the beef ribs.
- In a medium bowl, combine yellow mustard, brown sugar, smoked paprika, garlic powder, onion powder, chili powder, black pepper, salt, and optional cayenne pepper. Mix into a thick paste.
- Generously apply the mustard rub to all sides of the beef ribs and let sit for 30 minutes.
- Set up the smoker by adding soaked wood chips and a pan with beef broth and apple cider vinegar for moisture.
- Place the beef ribs in the smoker bone side down. Smoke for 6-7 hours, adding more wood chips as needed.
- After 6 hours, check the ribs for tenderness; they should pull away easily from the bone.
- Remove the ribs, let them rest for 15-20 minutes, then slice between the bones and serve.
