For the Bavarian Cream
  • 1 packet Gelatin Use powdered or sheet gelatin
  • 1 cup Milk Can substitute with almond or non-dairy milk
  • 1 cup Heavy Cream For lighter option, use half-and-half
  • 1/2 cup Sugar Can replace with maple syrup or agave
  • 1 teaspoon Vanilla Extract Use pure vanilla extract or vanilla bean for best flavor
For the Topping
  • 2 cups Seasonal Berries Strawberries, blueberries, raspberries, etc.

Method
 

Bavarian Cream Preparation
  1. In a small bowl, sprinkle the gelatin over a few tablespoons of cold water and allow it to bloom for about 5 minutes.
  2. In a medium saucepan, combine the milk and sugar over medium heat, stirring gently until the sugar dissolves.
  3. Remove from heat, whisk in the bloomed gelatin until fully melted, and then let the custard cool slightly at room temperature.
  4. In a large mixing bowl, whip the heavy cream until soft peaks form, about 2-3 minutes.
  5. Gently fold the whipped cream into the cooled custard mixture until smooth and airy.
  6. Pour the mixture into serving glasses or a mold, cover with plastic wrap and refrigerate for at least 4 hours.
  7. Once set, top each serving with fresh seasonal berries and garnish with powdered sugar or chocolate.
