- Preheat your oven to 400°F (200°C) and thaw salmon fillets if frozen, patting them dry with paper towels.
- Grease a medium-sized baking dish with olive oil or cooking spray.
- Spread halved tomatoes and sliced onions in the baking dish, drizzle with olive oil, and add minced garlic, half of the salt and pepper. Toss well.
- Roast the vegetables in the preheated oven for 15 minutes, until tomatoes blister and onions soften.
- Place the salmon fillets skin-side down on top of the roasted vegetables and sprinkle the remaining salt and pepper over top.
