Ingredients
  

For the Fritters
  • 2 cups All-Purpose Flour can substitute with gluten-free flour blend
  • 1 cup Sugar granulated sugar can be used
  • 1/2 cup Brown Sugar can substitute with white sugar
  • 1 tablespoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Cardamom can omit if not available
  • 1/2 teaspoon Salt
  • 1/2 cup Butter (cold) can swap for vegetable or coconut oil
  • 3/4 cup Milk almond milk can be used
  • 1 large Egg can use aquafaba as vegan substitute
  • 2 teaspoons Vanilla Extract can omit for simpler taste
  • 1 cup Chopped Rhubarb fresh is best, frozen can be used
For the Glaze
  • 1 cup Confectioner's Sugar can substitute with icing sugar
  • 2 tablespoons Milk (for glaze) higher fat milk will yield a richer glaze
  • 1 teaspoon Vanilla Extract (for glaze)

Method
 

Baked Rhubarb Fritters Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with non-stick spray.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, cardamom, and salt.
  3. Cut cold butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk milk, egg, and vanilla extract until blended, then pour into dry ingredients and stir gently.
  5. Fold in chopped rhubarb until evenly distributed.
  6. Drop heaping tablespoonfuls onto the baking sheet spacing them 2 inches apart and bake for 11 to 13 minutes.
  7. Prepare the glaze by whisking together confectioner's sugar, milk, and vanilla extract until smooth.
  8. Brush the glaze on warm fritters and broil for 2 to 4 minutes until bubbly and golden.
  9. Allow to cool slightly before serving.
