  • 2 tablespoons Olive oil or any light oil

For the Seasoning
  • 1 teaspoon Garlic powder or use fresh minced garlic
  • 1 teaspoon Onion powder
For the Creamy Sauce
  • 4 tablespoons Butter or margarine for dairy-free
  • 2 cloves Garlic minced
  • 1 cup Heavy cream or substitute with half-and-half
  • 2 tablespoons Fresh parsley or substitute with dill
  • 1 teaspoon Dried oregano or Italian seasoning

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drizzle cod fillets with olive oil and season with garlic powder, onion powder, salt, and black pepper. Massage the seasonings into the fish.
  3. Place the seasoned cod on the baking sheet and bake for 12-15 minutes until opaque and flakes easily.
  4. In a saucepan, melt butter over medium heat, add minced garlic and sauté until fragrant.
  5. Stir in heavy cream, parsley, oregano, salt, and pepper; cook for 1-2 minutes.
  6. Serve the baked cod on plates, topped with creamy sauce and garnish with lemon wedges and parsley.
